Lamington

A lamington cake is a sponge cake coated in chocolate sauce and rolled in desiccated coconut.

Lamingtons were named after Lord Lamington (Governor of Queensland 1896 to 1901), or his wife, Lady Lamington.

The inventor was either French-born Armand Galland or Amy Schauer (Brisbane's Central Technical College)

A lamington was first served to the Governor, Charles Cochrane-Baillie, 2nd Baron of Lamington at Harlaxton House in Toowoomba in 1900.

Kiwi Myth

An April Fools' Day prank in The Guardian on 1 April 2014 written by Olaf Priol (an anagram of April Fool) stated that the lamington was a New Zealand sweet known as a Wellington.
